Scotch pancakes with banana & maple syrup

Make your pancakes fluffy and light by adding a raising agent- this version with sweet topping is great for brunch

Method

  1. Put the flour, baking powder, egg, milk and sugar in a large jug then whiz with a hand-held blender until smooth (or just whisk together in a bowl).
  2. Heat a non-stick frying pan (add a little butter if you need) and pour in small amounts of batter. Once the top of the pancake has bubbled and set, flip with a palette knife and cook on the other side. Repeat until all the batter is used.
  3. Stack the pancakes in a pile, slice the bananas and add to the plate. Drizzle with maple syrup and serve with Greek yoghurt or vanilla ice cream and extra maple syrup.

    OK but would the pancakes rise better if they are left to rest? Will the pancakes alone freeze successfully?

    This recipe is easy peasy and I will definately be making these again. Made the mistake of putting them in a very low oven to keep warm while I made them all... not a good decision, they turned out fine out of the pan but a sloppy mess out of the oven :(

    Very yummy. Made these for the children when they came home from school and they were so tasty (the pancakes, not the children!) that I ended up eating a third of them myself! Only then did I notice the recipe was supposed to feed 8... Oh dear. Perhaps too yummy! Incidentally, I found it impossible to make them round until I used my silicone egg ring which worked like a dream - 1 tbs mixture per pancake and they turned out beautifully.

    Just made these for my two year old son. I made them a bit more savoury by adding a small can of sweetcorn to the batter. Tasty. Adding this one to my binder!

    Scrummy!! I used self raising flour and left the mixture for 10mins. Made about 10 small scotch pancakes, i also added some cinnamon....lovely!

    YUM! .. i cooked these yesterday and they were lovely the recipe made about 10.. but could have made more if i didnt mess up the pancake proportions. :) .. i've never cooked anything like this before and although i burnt a couple of them.. i got the hang of it pretty quick and me and my boyfriend snarfed them down for lunch! it's my my new favourite recipe.. and i will definately be using it again.. soon. :)

    Loved it!!!! I put in vinila sugar AND caster suger in. It filled the kichen with the sweet smell of pancakes and vinila! Yum!!! :D

    Nice pancakes but shouldn't be described as 'Scotch' pancakes - these are just nice, sweet, ordinary pancakes. Very disappointed.

    Recipe made very nice pancakes but they were just normal pan cakes. They weren't thick and fluffy and in the pan the batter spread out too much. Nothing like the shop bought ones or my grannies pancakes!
