Olive & salami stuffed loaf
When friends drop by for a casual get-together this makes the perfect Italian-style lunch

Ready in 15 mins
- Mix together the first six ingredients.
- Split the loaf in half horizontally.
- Layer up the ham, salami and cheese on the bottom half, pile on the olive salad, put on the top half and press down.
- Cut into quarters.
GI Assessment
White bread has a high Gi rating and wholemeal is much the same but if you opt for a granary loaf you'll lower the Gi value.

- half a red onion , finely chopped
- 1 tbsp capers , rinsed and drained
- 1 garlic clove , crushed
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- round white loaf
- 8 slices cooked ham
- 8 slices Italian salami
- 2 balls mozzarella , sliced, or 6 slices Emmenthal
