Method

  1. Fry the bacon in a large non-stick pan (it will cook in its own fat) until golden, then add the leeks and carrots and cook for about 5 minutes until softened.
  2. Tip in the beans, chicken stock, tomato purée and pasta and simmer until the pasta is cooked.
  3. Stir through the parsley and serve in bowls topped with grated Parmesan.

    Used chorizo instead of bacon and added a few sticks of celery. Simple yet very tasty.

    Really good, first time using mixed beans and didn't know what I was going to make of them. Used an onion instead of leek and coriander instead of parsley purely because I had those and didn't want to spend more money, it was great!! As other have done, I also added double the pasta to have it as a main course.

    My husband and I absolutely love this soup, its tasty, low fat, comforting and satisfying. It's perfect for dark and cold winter evenings. We have made it several times experimenting with different bean mixes and adding different pasta shapes. We love eating this the next day as the flavours are delicious!

  • 8 rashers rindless streaky bacon , chopped
  • 2 leeks , halved and sliced
  • 4 carrots , halved lengthways and sliced
