Method

  1. Put the butter in a 1-litre baking dish and microwave on High for 30 secs-1 min until melted. Add 1½ bananas, mash into the melted butter, then add the sugar, flour, cinnamon, eggs and milk. Mix together well.

  2. Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen. Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.

I originally made this pudding following the method but found it rather rubbery. So the next time I creamed the butter and sugar and cooked it in the oven and it had a nice texture I also made some toffee sauce to go with it as recommended in the serving suggestion but found it far too sweet. So the third time I made this pudding I served it with custard which was perfect and the only way in future that I will serve this pudding.

don't know what I did wrong but turned out like banana bread pudding, but tasted fabulous

Baked this in a conventional oven at GM4 - is about 1 hour the correct length of time?
Very yummy anyway.

Used equuivalent amount of sweetner ( as diabetic) and Maple flavouring to compensate for no Muscovado taste. A new favourite

Just made this for dessert after dinner... Our main course was ready at 7pm and I decided to make this at 6.45pm... So easy, quick and absolutely delicious! A big hit with all the family! The consensus in our house was to add raisins next time... We had it with warm custard... Mmm, mmm!

Very nice. Made it with half-quantities of everything and reduced cooking time to 5 mins and there was plenty for 2 adults and our young daughter. Served it with ice cream and it went down very well all round!

For a bit of variety, I think next time I'll leave out the cinnamon and add a tablespoon or two of cocoa powder and see how that works out.

Fabulously easy recipe that is very moist. cooked in 5 minutes not 8 and served with vanilla ice cream. took minutes to make, definitely recommended!

We used this recipe for my 7year old daughters homework as she had to weigh ingrediants herself. The results were fantastic, moist sponge with a lovely flavour. Great way to use over ripe banananas

This was surprisingly good! I had some bananas to use up so did a quick search on banana recipes to find this. Can't believe how quick it was to make and will definitely cook again. Not good enough for guests but great when desperate for a quick easy dessert, with the ingredients always at hand.

Just made it now, tastes YUMMY! I am not an experienced cook, but i do love cooking! It was simple, tasty and didnt cost an arm and a leg!

I added chocolate chips, used vannila extract rather than cinnamon and added the full 2 banana in the mix rather than put half on top. You also only need to microwave for 6 mins, perfectly moist that way!

Best microwave cake EVER! :)

I've made this a few times now and it's always a hit with the kids and my husband. It's quick, easy and delicious and a great way to use up bananas that the kids think are too far gone to eat.

I printed this recipe out and stuck it in my trusty recipe binder months ago, poised for when I needed to produce a quick dessert out of storecupboard ingredients. I kept putting off making it, though, being a little sceptical as to how well a pudding that's simply zapped in the microwave for eight minutes could possibly turn out. Well....it was pretty good! I watched it like a hawk and, admittedly, it did go a little chewy around the edges. But the middle was light and fluffy and the flavour was spot on. Whipped up some toffee sauce using single cream, golden syrup, butter and brown sugar and it went down a treat. Brilliant stand-by pud!

it tasted ok but the texture was not as light as it could have been. May try it again just to see if it was a one off.

This is a gorgeous pudding! OK, it's never gonna win anyone a Michelin star, but as a homely dinnertime treat it ticks all the boxes - sweet, tasty, stodgy, comforting, cheap, quick and easy. Absolutely delicious with a toffee or caramel sauce and cream. (ice cream as well would be too sickly sweet for my taste). It is one of my all-time favourite puddings now, and worth getting in a few extra bananas for.

im a thirteen year old boy who after a sunday roast one day could not think what to make for pudding... then i came across this recipe. it was the easiest thing in the world to make and the whole family loved it. it was even better with a dollop of ice cream on the side! brilliant recipe that anyone can make

This is so easy to make and very yummy.
I added coco powder to give it a nice chocolatey twist.
