  1. Put the butter in a 1-litre baking dish and microwave on High for 30 secs-1 min until melted. Add 1½ bananas, mash into the melted butter, then add the sugar, flour, cinnamon, eggs and milk. Mix together well.

  2. Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen. Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.

This was amazing! Perfect for a quick dessert and so tasty - every loved it. Served it warm with ice cream - would have loved some toffee sauce but there was none in the shop. Next time definitely. This will be my go to dessert especially when pressed for time.

This has to have 5 stars just for the ease of making and the fact that it comes out perfectly. Ok, so its not the most strong of flavours, and certainly needed the toffee sauce to make it more flavoursome, but it is a lovely moist well risen sponge-type pudding. I made this for the first time today and it took about 11 minutes from starting preparation to being ready to eat! I will say that it does clearly need to be large bananas and very ripe ones at that (mine were too small and not ripe enough) to make enough flavour.

This has become my family's favourite pudding. Uses up ripe bananas and is so quick and easy to make. I serve it warm with lots of clotted cream icecream, my eldest likes to add toffee sauce, too.

The kids loved making this and loved eating it even more.
Although we used dark muscovado sugar so it came out a darker colour but it still tasted fantastic, thanks.

I visited my sister who was staying in a furnished apartment for a week, and had no oven, just a microwave. She also had 2 bananas that were about to die a horrible death, so I rustled up this recipe (had to guesstimate the quantities - she didnt have any measuring cups or scales either!) and also included chopped walnuts (how can u have banana without walnuts???)....took only a few minutes to make and was delicious to eat, much better than i expected...i made toffee sauce to go with it, but its just as good without......nice hot or cold....would definitely make again. my only Q is - the flavour of banana is subtle, any way to bring it out more?

Tried it last night and it turned out really well! love the part that you can leave it to cook in the microwave while enjoying dinner! added a bit more cinnamon (a personal favourite) than suggested and sifted some icing sugar on top while still warm...

will certainly make again..may be with different fruits this time!

ooh yummy. eating this as i type. used gluten and wheat free flour so used an extra banana and an extra tbs of milk to compensate. Perfect!

My perfect Sunday stand-in pod when my girls ask for sponge pudding, even banana hating friends asked for more, sometimes microwave is temperamental and overlooks, sometime 6mins is enough, other times needs the full 8...

Really easy and really yummy! Great for using those yukky bananas ip which nobody wants. I baked this in the oven as I already had it on. I used a loaf tin and omitted the milk and it came out lovely.

Saw this one day while browsing desserts (everyone fancied something new). Made it exactly as it says, and it came out perfectly (My microwave is only 600W i think). Made for family and some friends, topped with golden syrup/toffee sauce, and cream/custard... Everyone prefers a different combination :3 Love this recipe I've made it countless times since I found it, thanks.

My pudding just would not cook in the middle in the microwave. Next time I will bake it on the oven. A very good stand by recipe.
