Method

  1. Put the butter in a 1-litre baking dish and microwave on High for 30 secs-1 min until melted. Add 1½ bananas, mash into the melted butter, then add the sugar, flour, cinnamon, eggs and milk. Mix together well.
  2. Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen. Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.

Save over-ripe bananas for this recipe. Freeze them whole in plastic bags - the browner and softer the bananas, the stronger the flavour when baked.

    Incredibly easy to make, wonderful. I must admit I was a little suspicious at first as I had never dared make puddings in the microwave (which I generally only use for re-heating leftovers really) but I ended up being really surprised by the stunning result. I split all ingredients in half (and reduced cooking time to 4 minutes accordingly) and found the pudding nicely moist and delicate. I will definitely do this again, maybe with cooked apples...

    So so - I made it because I was in a caravan with a microwave and had some over ripe bananas and it looked easy. The final result was alright - my kids thought it acceptable but nothing to rave about.

    Never cooked anything in a microwave before but thought I would give it a shot. Could not be simpler to make - cooks in 8mins while you are eating!! Husband and children all had seconds - really a suprise for a microwave, you would never guess. A great storecupboard pudding. Even better with a smidge of toffee sauce :-)

    This was a bit disappointing. Mine was not very sponge like and looked a bit grey :( It tasted better than it looked and would probably have been better if I had made the toffee sauce.

    My partner knocked this up in around 15mins, easy, quick and lovely and moist. Would be heaps better with a bit of ice cream to go with it (will have to make sure we have some if we make it again!). A simple, tasty dish

    Very surprised this was very good especially with toffee sauce and cream. It only took 6mins to cook the full 8 and it would of started to spoil. I will deffo make this again its a perfect last min standbye.

    I made this with plain flour and 2 tsps baking powder instead of self-raising flour; it was nice and light but would have been better with a sauce as it was a bit stodgy and needed something to go with it. You need to adjust it according to your microwave; mine took 14 minutes to cook, but it's very easy to make.

    Yummy! Made this with my 3 1/2 year old daughter, she was able to mix it easily and enjoyed chopping the bannanas up too. Added some chocolate chips that worked well, love choc and banana together! Recommend as a quick fix and child friendly recipe.

    My 10yr old made this almost by herself ,we added chocolate chips which did end up on the bottom but the pudding tasted great,I also added some vanilla extract with seeds in it, we had it with toffee sauce but it was incredibly moist and could have been eaten alone, tomorrow we are going to eat the rest with custard.A fantastic keep me recipe,thank you !!!Not many recipes can be both so quick and so tasty
