  1. Cook the pasta following the packet instructions, then drain.

  • half a red onion , very finely sliced
  • 1 lemon , zested and juiced
  • 4 handfuls of rocket
  • 2 tbsp small capers , rinsed and gently patted dry
  • 250g short pasta , gigli or riccioli work well
