Smoked salmon chowder

A great warming way to use up your leftover smoked salmon

Method

  1. Fry the onion gently in the butter, then add the potatoes, stock and milk and simmer until the potatoes are very tender.
  2. Add the smoked salmon and parsley and season well.
  3. Heat everything through and add a squeeze of lemon.

    This is possibly the nicest recipe for chowder I've ever made. The first time I made it I kept strictly to the recipe, and the second time I had 250ml of cream to use up, so added it with the milk. Both tasted gorgeous. Will definitely make it again and again.
