Smoked salmon chowder

A great warming way to use up your leftover smoked salmon

Method

  1. Fry the onion gently in the butter, then add the potatoes, stock and milk and simmer until the potatoes are very tender.
  2. Add the smoked salmon and parsley and season well.
  3. Heat everything through and add a squeeze of lemon.

    I thought this was brilliant!! I would definitely recommend putting in that extra half-lemon at the end, even if you don't particularly like the taste of lemons - it adds such a fresh touch to the whole dish, changes it dramatically!! Thanks olive for this!!

    This is really is a top recipe - it's super quick to make and produces a lovely, sophisticated dish that you could treat yourself to mid-week (so quick to make!) or serve to friends. I definitely agree with fstoney (above) that a liberal approach to lemon works brilliantly. Yet another brilliant olive recipe.

    Great recipe for those cold winter days, a nice change from my regular veggie stewy kinda soups! I add a touch of coconut milk, a pinch of chili flakes and then a squeeze of lime juice to serve to add a thai twist to it - jazzes the whole thing up to make it even more tasty!

    Made this chowder twice noe. The second time one of my guests was allergic to potatoes so made this with sweet potato. It worked really well. It is ideal for supper on a cold night with crusty bread.

    This was very nice, I want to give it 4.5 stars! Only downside was that I found it a little thin. Perhaps I did not cook the potatoes for long enough, they were very soft, but are we aiming for completely falling apart ? I feel that it would have been better had I mashed the potatoes up a little before adding the salmon. Will make again though. My OH loved it.

    I do like a nice chowder but actually wasn't convinced that this simple and non creamy one could be any good. Trusted the ratings though and am pleasantly surprised: it is indeed simple in the meaning of "no fuss" but absolutely gorgeous! Thank you!
