Mango, broccoli & ginger soup

Fruit in a soup? You better believe it as mango gets a makeover for this Asian-inspired winter warmer

Method

  1. Heat the oil in a pan. Add the onion, garlic, ginger, curry paste, the chopped mango and broccoli and cook slowly for 4-5 minutes without colouring, stirring occasionally. Add the stock and simmer until the broccoli is tender but still bright green. Whizz until blended. Stir in the cream and warm through. Top with mango shreds and chilli.

    ABSOLUTELY GORGEOUS! Will DEFINITELY be making this again, who'd have thought the mango, brocolli and ginger would go together as well as it did. This has become one of my favourite soups! :D

    This was cooked with purple sprouting broccoli and gave the soup a more intense green colour. It was an interesting and unexpected blend of flavours which went down very well.

    OMG! LOVELY!!!! Try this - it is great. I like to serve it with slices of bread that have been lightly soaked in oil, honey, lemon juice, ginger and red peppers and then grilled in the oven for about 5 minutes.

    I was surprised to find that this soup was as nice as it was - really. I think it probably took as all by surprise. Was a touch too hot, but that was probably my fault, as I stirred in a red chilli into the soup as well as the curry paste before I blitzed it. It gave it an awesome colour, though. :) xx

    I was really not impressed, I found the ginger was too strong and the mango was a tad too unusual... Sad to say it's been a great disappointment, I was looking forward to trying it!

    It was a tasty soup and I'll make it again. However...neither my husband nor I could taste the mango (and it was a pretty decent size tasty mango too). I used Thai green curry paste from an Asian supermarket, and it is much stronger than the supermarket versions - and it might have all been too much for the poor mango. That being said, it wasn't especially missed, and as I said, I'll be making this again. Although maybe I'll add coconut milk instead of cream and omit the superfluous mango next time though.

    This is my new favourite soup! According to the comments left by a few others about the mango being overwhelmed, I reduced the ginger by two thirds and the Thai curry paste (full strength Asian shop variety) by half; I used a whole large mango and added about a teaspoon of brown sugar in hopes of bringing out some of the mango's sweetness. The result was a well-balanced, if spicy, delicious and slightly sweet soup.

  • 2 tbsp sunflower oil
  • 1 onion , finely chopped
  • 1 garlic clove , crushed
  • a thumb-sized piece of grated root ginger , grated
  • 2 tbsp Thai green curry paste
  • 400g broccoli , trimmed and roughly chopped
  • 1 small mango peeled and chopped, save a few shreds for the top
  • vegetable stock fresh, cube or concentrate, made up to 900ml
  • 142ml single cream
  • 1 red chilli , halved, shredded
