Gooey school treacle sponge

So simple, so good, especially now there's no longer any maths homework to do...

20 minutes + 30 minutes in the oven or 7½ minutes

Method

  1. Butter a 1-litre baking dish, and dollop the syrup in the bottom. Put the butter and sugar in a food processor and blitz until pale. Beat in the eggs one by one, then the vanilla. Add the flour and pulse until just mixed. Scrape into the dish, on top of the syrup.
  2. Either cover with cling film and microwave on medium for 7 1/2 minutes or bake in the oven at 180C/fan 160C/gas 4 oven for 30 minutes until risen and golden. Serve with lashings of custard.

    I decided to give this a try when I was in the middle of a baking sesh last month, when to my horror, I discovered I only had 1 egg left! I ended up making up half the mixture, and putting it into 3 ramekins (One overflowing dessertspoon of golden Syrup into each) and was worried that there was only a piddly amount of cake batter in each pot. How wrong was I! It worked brillantly I was surprised how much the puddings exploded in the oven - will make again!

    Fantastic recipe, really easy to make and tasted absolutely delicious. Great for a winter evening. Next time I'm going to add more syrup because that way you get more sauce

    This dish does exactly what it says on the tin. It is so reminiscent of childhood when served with hot custard. The sponge recipe is also a really light, fluffy consistency which I use for fairy cakes!

    This was yummy, was worried it would be too sweet but it was delicious and great with custard! Quick and easy to prepare and went down well with all the family! This will become a regular pudding in our house!

    This was a lovely quick and easy recipe... i read comments before hand and found them helpful so thanks guys..I added less treacle and less sugar in custard and it was perfect the kids are begging for me to make it again! :) this has become a real winter warming fave YUMMY

    I tried this one at the weekend an it was a hit with the family...it's my dad fav pudding so I was a bit nervous as to how it would turn out but it was lovely and they ate the lot! I did add 2 more spoons of syrup though an baked in the oven...next time I�ll try the microwave option for variation!

    Great idea, shall be making this for dessert tonight, love syrup sponge with home-made custard, look forward to it. It's great that it's not steamed, quick, easy & judging by the comments I'm sure it will be delicious.....Can't beat simple 'comfort food'. I shall stick to your recipe, that's the best bit for me, the sweet golden syrup with a light sponge. Just make sure that I get the piece with extra scrapings of syrup!     Will be making this for our Valentine's dinner (57 years to the day since our first date!) my man LOVES syrup pud, which I usually make in the microwave, but will try this for a change. I suspect having read the comments about the ratio of sponge to syrup that I'll warm some extra syrup up in the microwave - it's a wonder he has any teeth left!

    This is so easy to make & the results were "awesome" according to both my children. The sponge was light & fluffy and there was just enough syrup. Went really well with vanilla ice cream. A great store cupboard dessert.

    Made in individual ramekins. Needed a lower oven temp for about 20 mins. lovely :) but doesn't help with my golden syrup addiction.
