  • 6 overloaded, oozing tbsp golden syrup
  • 100g butter, plus extra for the dish
  • 100g sugar
  • 2 eggs
  • ½ tsp vanilla essence
  • 100g self-raising flour
  • custard, to serve

Method

  1. Butter a 1-litre baking dish, and dollop the syrup in the bottom. Put the butter and sugar in a food processor and blitz until pale. Beat in the eggs one by one, then the vanilla. Add the flour and pulse until just mixed. Scrape into the dish, on top of the syrup.
  2. Either cover with cling film and microwave on medium for 7 1/2 minutes or bake in the oven at 180C/fan 160C/gas 4 oven for 30 minutes until risen and golden. Serve with lashings of custard.

My bloke loved it. I don't much like treacle tart, but due to the lemon lifting it, I even enjoyed a small piece!

Go to recipe for a quick dessert. Throws together in a few minutes, no fussy bits to the recipe. My family loves it.

My go to pantry pudding! I don't bother to measure the syrup, I just make sure the bottom of the baking dish is well coated. Delicious with vanilla ice-cream on a warm day or hot custard on a cold day :-)

Yummy, yummy, yummy. My family loved this! I halfed the recipe for two adults and two young children and it was all eaten up! Will be making this again.

This is really nice, try adding some syrup to the batter and another dollop more to the bottom to make it extra yummy!!

I made this the first time in the oven, it tasted great but all the syrup soaked in and was a bit dry. The second time I microwaved it and it was so much better, really soft and steamy with a lovely syrupy bottom :-)

Very easy to make and so tasty. I didn't change the recipe, it was perfect. My husband said it was the best syrup pudding he's eaten and he's eaten a few in his 52 years!

This is a bit too easy to make considering how delicious it is and how quickly it disappears! My kids now request this every time for Sunday lunch and I am more than happy to oblige!
