Method

  1. To make the chocolate sponge pudding, heat the oven to 180C/fan 160C/gas 4. Mix the flour, cocoa powder, ground almonds, chocolate and sugar together. Then stir the milk, butter and egg together and mix into the dry ingredients. Spoon into 6 individual ramekins or ovenproof dishes.
  2. To make the sauce, mix the sugar and cocoa powder and gradually stir in 300ml boiling water. Spoon this over the sponge mixture.
  3. Bake the puddings for 20 minutes. Lower the oven temperature to 170C/fan 150C/gas 3 and cook for a further 10 minutes until the sponge feels firm to the touch - the sauce will be lurking underneath. Serve straight from the oven with cream.

    I substituted an extra 50g of flour instead of the ground almonds. I only wanted enough for two people so halved the recipe and used a small egg. The result was four medium sized ramekins full of very scrummy chocolate pudding with a velvety chocolate sauce underneath, thank you for this recipe.

    This was absolutely amazing! So gooey and chocolatey and great served warm with vanilla ice cream. And so simple to make! Looking forward to making it again...

    Divine and so easy to make. I made into 4 large oval pie dishes and cooked for the same time, each one easily feeds 2 people ( unless you're my hubby who scoffed the lot! ) Brilliant for dinner parties. Try putting a large spoon of black cherries / cherry pie filling in the bottom of each pot then continue as per the recipe. But cut down on some of the sugar so it's not too sweet. Cherry chocolate heaven!
