Dead good spaghetti carbonara

A classic carbonara recipe that will serve you well in years to come

Method

  1. Boil a large pan of water and cook the pasta following the packet instructions. Meanwhile, heat a knob of butter in a small frying pan and cook the shallot, garlic and bacon for 5-7 minutes until golden. Beat together the eggs, cream, most of the parmesan and plenty of ground black pepper.
  2. Drain the spaghetti and return to the pan, off the heat. Add the shallot and egg mixtures and toss together until the pasta is evenly coated. Divide between two bowls then scatter the rest of the parmesan over, with a grinding of black pepper to serve.

    My 16 year old son, text his girlfriend to say this was the best carbonara pasta he has had. And he has had a few. A big compliment from someone who is so fussy with their food. Its now been printed and put in a folder especially for him. Going to try Chunky sausage and tomato pasta tonight. See if that gets the seal of approval. Thanks for great recipes.

    It was dead good although probably not the best ever. I added a handful of fresh peas which gave a nice colour and texture to it and I cooked the egg and cream mix slightly as I stirred it through the spaghetti mix as we're not keen on raw egg in things. We liked the slightly scrambled effect. An easy recipe and one I'll probably use again but with my own variations.

    I made this on bank holiday monday as needed to make something quick and yummy - I wasn't disappointed. Thought the flavours were lovely and quite subtle. Used linguine as I prefer it. Only thing was that because the creamy/cheese mixture is not heated up at all, I found that despite it being mixed with the hot pasta, it was only lukewarm when I served it up.

    Great recipe and so easy to make! Loved it with a tear and share garlic bread - great for a night when you need a quick fix, I now have all of the ingredients as staples and make it once a week!
