Dead good spaghetti carbonara

Method

  1. Boil a large pan of water and cook the pasta following the packet instructions. Meanwhile, heat a knob of butter in a small frying pan and cook the shallot, garlic and bacon for 5-7 minutes until golden. Beat together the eggs, cream, most of the parmesan and plenty of ground black pepper.
  2. Drain the spaghetti and return to the pan, off the heat. Add the shallot and egg mixtures and toss together until the pasta is evenly coated. Divide between two bowls then scatter the rest of the parmesan over, with a grinding of black pepper to serve.

    Disappointed. I normally love creamy pasta dishes. Made the recipe to the letter and it wasn't particularly flavoursome and was too eggy/'sloshy'. We ate it but there're better carbonara recipes out there so won't be trying this one again :-(

    Everyone was so right, this was just lovely! My husband who finds spaghetti carbonara usually quite boring, just loved it! The children really enjoyed it and we served it with a green salad and the cheesy garlic bread, which was also fab. The shallots make it and I used half fat creme fraiche, which took nothing away from the taste. Will be a firm favourite for us.

    Very good and quite easy to make... Even though the egg mixture turned into scrambled eggs when I was blending everything together. The pan was too hot. It was still tasty, but needed more salt.

    Great recipe, agree with all that's been said above. I did use ham instead of bacon though as with all that cream, eggs and cheese I wanted something lean, it worked really well. Also, there was plenty left over for lunch tomorrow so would say it would easily serve 3 people.

    Used red onion, pancetta, added some mushrooms and half fat creme fraiche (made us feel less naughty!) and used angel hair spaghetti. It was delicious and will definately make again (when we are feeling thin). Only problem - there was such a lot of it! Perhaps my kitchen weighing scales are not working (at least enough for 4). Next time I'll cut down on the amount of pasta. However, as we could not freeze we managed to polish off the whole lot! We could'nt move all evening!
