Dead good spaghetti carbonara

Method

  1. Boil a large pan of water and cook the pasta following the packet instructions. Meanwhile, heat a knob of butter in a small frying pan and cook the shallot, garlic and bacon for 5-7 minutes until golden. Beat together the eggs, cream, most of the Parmesan and plenty of ground black pepper.
  2. Drain the spaghetti and return to the pan, off the heat. Add the shallot and egg mixtures and toss together until the pasta is evenly coated. Divide between two bowls then scatter the rest of the Parmesan over, with a grinding of black pepper to serve.

    This receipe is the best one yet that I have used - even Husband loved it - who up until has always disliked carbonara - or the ones that I have cooked anyway :-) this one is a def keeper and highly recommend

    This was billed as "Dead Good Spaghetti Carbonara" and I have to say right from the start, that it truly was. In fact, it was awesome. Of course, its not the type of meal one could or would have EVERY day, probably not even once a month, but every so often or for a special treat. Ooooh yes!! I was nervous about putting the cold cream/egg/cheese mixture in on top of hot pasta - I felt it would cool it too much, plus I was worried about the egg turning to scrambled egg before my very eyes - but, it did neither. This was really the alchemy of cooking in action. :-) To have made a "real" Carbonara, and to have had it a success, I almost feel like I'm beginning to know how to cook. :-)

    I made this with leftover Christmas ham and was worried that it would be too bland. It wasn't. Fantasticly easy and makes you look like a pro! p.s. Max, university is pot noodle, not nice stuff like this!

    Well my kids adore this - cooked it for the first time today - I added in chopped up hotdogs along with the bacon. Went down very well - they definately want me to do it again!

    Well, I made this tonight as time was short & we had eggs, cream & bacon..... Mmmmmmmmmmmmmmnnnn!!! says my husband, I think we shall be having this again..... delicious, quick & easy, and he'll be doing the washing up, so I can sit down with a nice glass of wine & relax........

    I made this last night and it was lush. My mum goes to Rome at least once a year and loves carbonara, and she said it was as good as anything she had had there! Also added mushrooms.

    Tried this for 1st time last night, I swapped cream for creme fresh as well and it was gorgeous, from cooking to eating took about 30 mins, brilliant fast food, reallly filling too!
