Dead good spaghetti carbonara

Method

  1. Boil a large pan of water and cook the pasta following the packet instructions. Meanwhile, heat a knob of butter in a small frying pan and cook the shallot, garlic and bacon for 5-7 minutes until golden. Beat together the eggs, cream, most of the Parmesan and plenty of ground black pepper.
  2. Drain the spaghetti and return to the pan, off the heat. Add the shallot and egg mixtures and toss together until the pasta is evenly coated. Divide between two bowls then scatter the rest of the Parmesan over, with a grinding of black pepper to serve.

    First time ever I made a carbonara and the first web page I came across pointed me to this page. Brilliant, loved it esp with smoked bacon. Will definitely be making this again!

    delicious, but will only use 1 clove of garlic next time, and not streakly bacon as I think it was too fatty, will swap creme fresh for the cream to. But great recipie and fun to make.

    I don't know about everyone else, but I thought the portion sizes were massive. I would suggest this feeds 3/4 rather than 2! We ate it for lunch the day after. I liked it- I find carbonara fairly boring as dishes go, but this was a very good version and so so easy to make. :)

    lovely dish...i used wholewheat spaghetti and 180g instead of 250g....that seems like a lot of pasta for 2 people! i used air dried ham(similar to parma) and had small salad to start, and lovely garlic baguette with the meal.....perfect mid week meal....no need for dessert or anything else, other than couple of glasses of delicious white wine:)

    Replaced the bacon with chicken and added some parsley as this is what I had in. We were really pleased with the result. Sure it would be just as nice with the bacon. I will be trying again.
