Dead good spaghetti carbonara

Method

  1. Boil a large pan of water and cook the pasta following the packet instructions. Meanwhile, heat a knob of butter in a small frying pan and cook the shallot, garlic and bacon for 5-7 minutes until golden. Beat together the eggs, cream, most of the parmesan and plenty of ground black pepper.
  2. Drain the spaghetti and return to the pan, off the heat. Add the shallot and egg mixtures and toss together until the pasta is evenly coated. Divide between two bowls then scatter the rest of the parmesan over, with a grinding of black pepper to serve.

    indulgent cheesy, creamy, comforting pasta at its very (naughty) best. will use creme fraiche next time, though the cream is fab for a special treat! so easy, so tasty. great!

    I used cubed pancetta and fried it off with mushrooms red onion and garlic and added this to the pasta before the egg mix, i used low fat creme fraiche instead of cream to reduce the fat; it was so simple and very delicious!

    Delicious and so easy to make! For even more flavour, do as the Italians do, add the drained spaghetti to the frying pan with the shallots, garlic and bacon and stir before adding the egg mixture.

    Made this last night - used pancetta cubes and added the eggs at the very end to prevent them scrambling and it worked really well. Also used 3 cloves of garlic since we love garlic. Definately the recipe I'll use in future.

    I gave my husband the recipe to follow. He's a novice but managed this no problem. We didn't have any shallots so replaced them with a red onion. It was really tasty and I shall be requesting it regularly!

    Had this for tea tonight with garlic bread. i used penne pasta instead of spaghetti, pancetta cubes instead of streaky bacon and 3 mushrooms instead of a shallot. My kids who are fussy eaters cleared their plates this was delicious and think i will be making it once a week. Very tasty and cheap to make

    I have made a version of this recipe for years but have never used cream before. I think it is better with just the eggs, no cream and a little more cheese.
