Dead good spaghetti carbonara

A classic carbonara recipe that will serve you well in years to come

Method

  1. Boil a large pan of water and cook the pasta following the packet instructions. Meanwhile, heat a knob of butter in a small frying pan and cook the shallot, garlic and bacon for 5-7 minutes until golden. Beat together the eggs, cream, most of the Parmesan and plenty of ground black pepper.
  2. Drain the spaghetti and return to the pan, off the heat. Add the shallot and egg mixtures and toss together until the pasta is evenly coated. Divide between two bowls then scatter the rest of the Parmesan over, with a grinding of black pepper to serve.

    Does what it says on the label.This is the first carbonara I've made that my fussy hubby has not only eaten but said was very yummy - had to swop the shallots for mushrooms due to fussy hubby. Very rich!

    This is a simple easy and tasty dish. I was like others worried about ending up the scrambled egg but thank god it didn't happen! I tweaked it to suit my own personal flavours slightly. I had three shallots as I love onions added some yummy chestnut mushrooms and lots of peas to add colour and nutrition. It really is a fab dish that's impressive tasty quick and easy! Can't wait to try it with creme freche as others have suggested :)
