- 250g spaghetti
- butter
- 1 shallot, finely chopped
- 2 garlic cloves, finely chopped
- 6 rashers of streaky bacon, chopped
- 2 eggs
- 142ml carton single cream
- 25g parmesan, finely grated

Method
- Boil a large pan of water and cook the pasta following the packet instructions. Meanwhile, heat a knob of butter in a small frying pan and cook the shallot, garlic and bacon for 5–7 minutes until golden. Beat together the eggs, cream, most of the Parmesan and plenty of ground black pepper.
- Drain the spaghetti and return to the pan, off the heat. Add the shallot and egg mixtures and toss together until the pasta is evenly coated. Divide between two bowls then scatter the rest of the Parmesan over, with a grinding of black pepper to serve.

I have 5 boys who love carbonara, I usually fry some bacon & use a jar of sauce so thought Id give this a go as it looked so easy. I doubled the recipe & used an onion & creme fraiche instead of shallots & cream. It was lovely & the kids much prefered it to shop bought. I'll definitely be making this regularly.
Lovely. Even my husband enjoyed it & he is not into pasta. We live in an area of europe where proper "English/Danish" bacon is not widely available, so I used what they called smoked bacon & a few slices of pepperoni sausage & added a few mushrooms. It was still tasty, but next time I will use smoked pork which is widely available.
Very good recipe, everyone at home truly enjoyed it. Instead of using butter, i started to slowly fry the bacon as soon as i put the water to boil. By the moment the Bacon had lost most of the fat i added the garlic and shallot, about the same time i added the pasta to he boil. The result was a crispy bacon with real garlic fragrance. As soon as the pasta was ready, so was the bacon. Also added some dry basil on top. Amazing taste, definitely going to be a regular at our plates.
