Radicchio & halloumi salad with lemon anchovy dressing
An eyecatching low Gi salad filled with unusual ingredients

Ready in 20 mins- Grill the halloumi on each side until golden. Heat 2 tbsp olive oil in a small pan, add the garlic and anchovies and cook until golden. Add the lemon zest and juice off the heat. Toast the bread in a toaster then cut into cubes. Divide the radicchio between 4 plates. Top with croutons, cheese and dressing, and sprinkle on the parsley.
