Fudgy coconut brownies

Dense and gooey, these storecupboard treats are made with cocoa rather than bars of chocolate

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn't catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

    I was so pleased with this recipe. Easy to make (I did the cocoa, butter and sugar in the microwave which worked well), cheap store cupboard ingredients, and it tastes great. Crispy and chewy on top, sticky and fudgy in the middle. Perfect brownie! The coconut gives it a great texture and taste, and best of all its easy to make dairy free, and still tastes wonderful made with dairy free spread instead of butter. BRAVO!

    I doubled the quantities as I had a crowd to feed. I balked at using 1kg of sugar so reduced it to 600g and they were just the right sweetness. I didn't reduce the amount of coconut though and found that it was very obvious they had coconut in them, it provided taste and texture. Even with doubled quantites I found the 45mins just too long, so maybe my larger tin was shallower. Went down a treat, out-eating all the other cakes I made :)

    lovely and chocolatey,great store cupboard brownies,didnt have any coconut so substituted with ground almonds and still turned out delicious ,my boys ate them in one sitting!

    Amazing! So easy and much cheaper to make as you don't need actual chocolate bars in it - but you honestly wouldn't know the difference! I used Green & Blacks cocoa which prob helped, but these are truly scrumptious!!

    Loved these, although... 1) the family doesn't like coconut so I added some zest and juice of an orrange 2) next time I might use slightly less sugar as they were a little sweet.

    Not a big coconut fan but thankfully it seemed to add texture more than flavour. As a lot of people have mentioned, seemed to be chewy at edges and undercooked/gooey in middle but assume is meant to be like that and think will go down a treat with ice-cream. I cooked mine in an Aga and despite checking frequently to prevent burning, the top went black in the space of 5 mins after around half an hour, so would cover next time I make - but there will be a next time!

    I don't usually keep a stock of chocolate in my cupboards, so I was pleased to find a recipe for brownies that I could make on impulse rather than having to shop for ingredients. I didn't have any coconut though, so I left it out, which didn't detract at all from the result. The texture was perfect even without the coconut. I added some white chocolate chips that I had in the cupboard. Will definitely make these again.
