Fudgy coconut brownies

Dense and gooey, these storecupboard treats are made with cocoa rather than bars of chocolate

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn't catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

    Delicious! Really easy to make. I did half the quantity as I was having a baking trial day and didn't want to turn the whole family into fatties, but it still filled the stated size tin nicely and may have been shallower than intended but still a good depth. I found it difficult to tell when it was cooked but went by smell and left it the exact time stated and hoped. It turned out perfectly-cooked but squidgy :-)

    This was easy to make but but apart from that I'm not that impressed and I won't make it again. Even with my sweet tooth I found it too sweet and too rich. I cut it into 25 squares instead of 16 and still found even one piece too sickly. I found it needed 5 mins more than the recipe suggested and it was still really gooey in the centre.

    These took a lot longer to cook than stated - the middle wouldn't cook. I also found them way too sweet. I'll try them again with less sugar.

    Absolutely delicious - went down really well at work. Top was crispy, centre was gooey - just how they should be! Definitely making again. I too cut mine in 25 squares, just more to go around!

    Kiinakris - if you use granulated sugar, whizz in a blender for a few seconds to make finer hey presto caster sugar :) I have put sultanas in this batch, smell is divine - 45 minutes is taking tooooooo long.

    These turned out absolutely scrumptious! Although I did mess about with the recipe a bit. I made it dairy free by using 200g coconut oil instead of the butter and used about 120g less sugar as it seemed such a lot. Sugar doesn't seem to melt into oil like it does butter however, so I'd advise heating and blending instead. Messy but worth it!

    Absolutely divine. Because I'd no golden caster sugar I put in 400g regular caster sugar and 100g muscavado. Very easy to make. Thx for such a great recipe.
