Fudgy coconut brownies

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn't catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

    An amazing recipe which resulted in some gorgeous snacks! Soft and gooey but also very filling and tasty :) They were popular with all the family - in less then a day, there are only a few left!! They were so easy to do that I'll definitely be baking these again :D

    Great tasting brownies so quick and easy to make. Made them as a gift but had to sample first very difficult not to polish them all off. Cooked for 10 mins longer cos didn't look done enough in middle,depends how gooey you want them.

    Following a different recipe from this website my previous attempt at brownies tasted good but didn't look that great. This recipe scores 5 stars on both counts. Looked fabulous and tasted delicious. Just finding my feet with baking and this was such a hit with workmates that it has done wonders for my 'baking confidence'. Onwards and upwards!

    I would like to make these but not having lived in the UK for 16 years I am out of touch with some products. In the US the coconut is either sweetened or unsweetened. Is this made with sweetened or unsweetened coconut?

    To Bowdenei The box of dessicated coconut I use when backing doesn't say whether it has been sweetened or not, but I am almost 100% sure it will be the unsweetened coconut you need to use.

    Dark, dense, and rich. I reduced the recipe by half and added dreid cranberries to one half of that - perfect results. Baked for 45 minutes, with baking parchment on top for the last 15, as suggested. I took them out when the knife was still a bit wet, so that they had a slightly gooey inside when still warm. Fool-proof recipe if even I can get it to come out looking and tasting like brownies.

    First attempt digital scales went on the blink so I guessed quantities and the brownies rose and were quite light. Second attempt was much fudgier and I also put a little ginger in and some chic chips. Marvellous and so easy.
