Fudgy coconut brownies

Dense and gooey, these storecupboard treats are made with cocoa rather than bars of chocolate

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn't catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

    Well, the description certainly doesn't lie: Fudgy, dense and gooey but delicious (if slightly over-indulgent). I made another version without the coconut, and with 125g SR flour and 1 tsp of Cayenne pepper. As with many previous posts, I had to cook for an hour.

    When I saw how much sugar was in the recipe I thought it might turn out a bit sickly, but they were delicious! Had them warm with baileys ice and they went down very well

    Have made these several times now, always very popular. So easy to make and keep well too, last batch lasted over three weeks just wrapped in foil - only cos my sons didn't know they were there at first, and I forgot about them! Didn't even have to be put in the microwave to soften. Coconut adds both flavour and texture

    Me and my friend made this but we replaced the coconut with fudge chunks and OMG it was brilliant! We ate when still warm and it was so good and googy; however it did become a bit sticky after a while but a quick drink sorted all that. We would totally recommend this

    My husband thinks of himself as a bit of a brownie afficionado and claims that these are the best brownies he's ever had. I did raise an eyebrow when I saw that the recipe called for over a pound of sugar....but the result was not overly sweet and beautifully fudgy and moist with a fantastic chewy crust. I added 100g of dried sour cherries which went beautifully well with the subtle coconut flavour (in my humble opinion) but I'm sure they'd be equally amazing without.

    Lovely brownie recipe...very easy to make and they come out very moist and squidgy! The coconut adds a subtle flavour to them and a great texture - I also add dried cranberries which works well.

    I ran out of cocoa powder so added dark chocolate with it. It didn't rise as much and seemed very gooey when i took it from the oven. The top was crunchy but there was a pocket of air beneath it and it eventually collapsed. However, when they were cold they tasted fab, the coconut adds great texture.

    These are WONDERFUL. I like the smokiness of the cocoa. I didn't have quite enough coconut so I augmented the batter with ground almonds and just kept my fingers crossed. It worked! These will now be my staple brownies.

    Just made this for my son returning from Uni for a weekend. Didnt have all the ingredients to hand so substituted ground almonds for the coconut and it turned out very gooy and yummy , will make again as so simple

    The amount of sugar rather frightened me initially but these worked brilliantly well and even teenage boys couldn't demolish them too quickly because they were so rich!!

    Excellent! I had to make a few changes due to limitations of what was in my cupboard, but it still turned out yummy. Good quality drinking chocolate instead of cocoa, and a fair bit less sugar to compensate. Ground almonds instead of coconut, and I added some frozen raspberries, and a bit of extra flour. It did take longer to cook, but my oven often does. I reckoned it was done when it stopped looking wobbly and a knife came out of the middle fairly cleanly. Very happy with the results and super easy.

    made these brownies! a real treat went down really well with family. Maybe i did something wrong however they were not as gooey as i would have liked, anyway will make these again as love coconut and chcocolate!

    I made this for my friends birthday but I didn't put the coconut in because of preference. I have to admit, I've tried and tried to make brownies with different recipes and this is the first time in 20 goes that it's worked. It's simple and it tastes AMAZING.
