  • 100g cocoa
  • 250g butter
  • 500g golden caster sugar
  • 4 eggs, beaten
  • 100g self-raising flour
  • 100g desiccated coconut
  • icing sugar, to dust (optional)

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn’t catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf – check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

Dark, dense, and rich. I reduced the recipe by half and added dreid cranberries to one half of that - perfect results. Baked for 45 minutes, with baking parchment on top for the last 15, as suggested. I took them out when the knife was still a bit wet, so that they had a slightly gooey inside when still warm. Fool-proof recipe if even I can get it to come out looking and tasting like brownies.

The box of dessicated coconut I use when backing doesn't say whether it has been sweetened or not, but I am almost 100% sure it will be the unsweetened coconut you need to use.

I would like to make these but not having lived in the UK for 16 years I am out of touch with some products. In the US the coconut is either sweetened or unsweetened. Is this made with sweetened or unsweetened coconut?

Following a different recipe from this website my previous attempt at brownies tasted good but didn't look that great. This recipe scores 5 stars on both counts. Looked fabulous and tasted delicious. Just finding my feet with baking and this was such a hit with workmates that it has done wonders for my 'baking confidence'. Onwards and upwards!

Great tasting brownies so quick and easy to make. Made them as a gift but had to sample first very difficult not to polish them all off. Cooked for 10 mins longer cos didn't look done enough in middle,depends how gooey you want them.

Made these without the coconut (because I hate coconut!) and it was absolutely delicious. So dense and moreish - perfect with milk/cream/ice-cream!

An amazing recipe which resulted in some gorgeous snacks! Soft and gooey but also very filling and tasty :) They were popular with all the family - in less then a day, there are only a few left!! They were so easy to do that I'll definitely be baking these again :D

I made this for my friends birthday but I didn't put the coconut in because of preference. I have to admit, I've tried and tried to make brownies with different recipes and this is the first time in 20 goes that it's worked. It's simple and it tastes AMAZING.

made these brownies! a real treat went down really well with family. Maybe i did something wrong however they were not as gooey as i would have liked, anyway will make these again as love coconut and chcocolate!

Excellent! I had to make a few changes due to limitations of what was in my cupboard, but it still turned out yummy. Good quality drinking chocolate instead of cocoa, and a fair bit less sugar to compensate. Ground almonds instead of coconut, and I added some frozen raspberries, and a bit of extra flour. It did take longer to cook, but my oven often does. I reckoned it was done when it stopped looking wobbly and a knife came out of the middle fairly cleanly. Very happy with the results and super easy.

The amount of sugar rather frightened me initially but these worked brilliantly well and even teenage boys couldn't demolish them too quickly because they were so rich!!

Just made this for my son returning from Uni for a weekend. Didnt have all the ingredients to hand so substituted ground almonds for the coconut and it turned out very gooy and yummy , will make again as so simple

These are WONDERFUL. I like the smokiness of the cocoa. I didn't have quite enough coconut so I augmented the batter with ground almonds and just kept my fingers crossed. It worked! These will now be my staple brownies.

i made this on saturday....was very easy and very moreish will definitely make it again....going to add some cranberries next time.

I ran out of cocoa powder so added dark chocolate with it. It didn't rise as much and seemed very gooey when i took it from the oven. The top was crunchy but there was a pocket of air beneath it and it eventually collapsed. However, when they were cold they tasted fab, the coconut adds great texture.
