Fudgy coconut brownies

Dense and gooey, these storecupboard treats are made with cocoa rather than bars of chocolate

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn't catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

    The coconut flavour is minimal but you really get the texture. I would definitely cover the top next time - it didn't burn but was very crisp, which in itself wasn't a problem but meant that it carcked when cutting so didn't look beautiful! I also froze them very successfully. Mmmmm...

    I made this after seeing it on here, took it into work and everyone enjoyed it. Lovely chocolate flavour and hint of coconut (just right, not too sickly). It could be addictive!!! It is the nicest brownie I have ever tasted. The recipe is SO EASY!! Send me more of these easy tasting recipes.

    Made these for my partner to bring into work and they went down very well in his office - so much so that there were none left for me :( so I will be making some again soon! They are very rich and fudgy, absolutely gorgeous, and so easy to make, plus they are much cheaper to make than normal brownies as you don't have to buy lots of chocolate! Top marks for this recipe :)

    I had to leave this in the over for longer than instructed for the centre to solidify fully, but this may just be down to the amount of Malibu I added, or my rather poor oven.
