Good source of iron,

Method

  1. Heat the oil in a deep frying pan, then soften the leek for 5 mins without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally.
  2. Tip in the peas and cook for 5 mins, then stir in the seafood to heat through for a final 1-2 mins cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.
Try

Chorizo sausage

Chorizo sausage comes from Spain and has a smoked paprika flavour. You can use a handful of pork or chicken instead - cook for 5 mins with 1 tsp smoked paprika before adding the rice.

Very nice delicate flavours. Used Sucuk (Turkish spicy sausage) rather than Chorizo as my husband doesn't eat pork. Sometimes hard to subsitute pork products to get the right taste for the pork eaters, but this is a winner.

Very tasty and easy, simple and filling meal. Most of the ingredients I have in the cupboard already so great one to whip up the night before shopping day. I add some peppers and a small amount of paprika. I would question the stated saturated fat content though, the chorizo alone would be 2.5G sat fat per portion (all Chorizo I've bought has been 8.5 - 9.9g/100g). Along with the quick Lamb Biryani, these easy rice dishes are perfect for hassle-free, quick and tasty meals, more please.

Love, love, LOVED this! Can't believe how easy it was to make as well. The chorizo really added to the flavour of the rice. I only had prawns with it so will be doing this one again with a variety of seafood, mm.

Very easy. Very tasty, chorizo gave a lovely richness to the dish. Wife loved it. Kids loved it. I initially thought I'd cooked too much and resigned myself to leftovers the following day, but we all had 2nd helpings and it all went!!! Highly recommended! Frozen seafood made it sooooo easy.

Amazing - so quick and easy. I added wine, paprika, cayenne pepper and used some coley, chicken and prawns rather then the seafood mix. Think I'll put a few langoustine on the top among the lemon wedges before serving next tie for that extra WOW.

Easy and delicious! We made it more 'Spanish', with 2 grated tomatoes (added after the chorizo) and one teaspoon of sweet (smoked) paprika. We used runner beans (cooked in advance) and red pepper instead of peas. Finally we cooked it on a barbecue, covered. Wonderful! We will definitely make this frequently.

YUMMY YUMMY!!!! this is a wonderful quick and easy recipe. I added a chicken breast and some peppers and when I realised I didn't have any frozen peas, I used special mixed veg instead (worked well and is more colourful!). It's easy half the ingredients and just make it for 2. My other half is is very fussy, gave it a 6/10, and left half the meal (more for me!!). You have to bear in mind that he would give frozen pizza 10/10 so don't take his word for it!!!

Oh! I forgot to say - don't forget to squeeze lemon juice on at the end - it really lifts the seafood flavour and gives it a bit of a zing!
