Easiest ever paella

Method

  1. Heat the oil in a deep frying pan, then soften the leek for 5 mins without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally.
  2. Tip in the peas and cook for 5 mins, then stir in the seafood to heat through for a final 1-2 mins cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.

Chorizo sausage

Chorizo sausage comes from Spain and has a smoked paprika flavour. You can use a handful of pork or chicken instead - cook for 5 mins with 1 tsp smoked paprika before adding the rice.

    made this this evening,easy to prep and cook,used chicken and prawns,will do it again but will add some white wine to stock as the flavour was a little bland kids loved it.

    Brilliant recipe, one of our regulars! Have added a few chillies, especially Chipotle chillies for that smokey heat. Will try it with chicken next time - Yum!!!

    I did this for the first time last night, using some of the suggestions from the comments, like adding some chilli, I added half a teaspoon of cayenne and 3/4 teaspoon of paprika, nothing else changed and it was fantastic. I did the seafood mix version, it was so easy, quick and cheap to cook and tasted like a really expensive meal. It didn't feed four though - not after seconds, thirds and a late night snack as it was too tasty to have leftovers!

    My 1st try making paella and it was good. The only problem I had was the long grain rice took 50 mins! I guess I didn't look at the rice cooking time in the package and just followed the recipe's instruction. Had I known, I wouldn't have put the green peas in so early as the colour turned into a dull green. I also added some chilli powder as we like it a bit spicy!

    My husband loves seafood but son hates it, so I also use chicken, dish up my sons portion, then stir in the seafood and leave to warm through for a few minutes.

    This is quite delicious and extremely authentic-tasting for something so quickly put together. The frozen seafood mix that we get here in Canada contains squid, shrimp, mussels and clams, so I thin that also helped. I have made it without using the frozen mix and adding just prawns, but it wasn't as good. I also think it is essential to use proper chorizo, or else you get a bland dish.

    i made this recipe exactly, but didnt have specific cooking time for the chorizo sausage, i found it very very tough to the point not eatable, but will be trying again, untill i perfect it, maybe no seafood next time.

    So simple and tastes fantastic. I split it in half just before it was finished and added chilli and mussels to the grown-up half and left the other half as the recipe intended for the kiddies of the house. Topped it with lots of fresh parsley and served it with lemon wedges. It went down a storm! Will definitely be making it again.

    I wasn't sure whether I would be a fan of paella before I made this; in fact it's the best paella I've ever had! So tasty and really filling. Couldnt find any mixed seafood so just used king prawns, and didnt really take any notice of the weight for chorizo before I went shopping so used double.. a bit too rich but delicious nonetheless!
