Easiest ever paella

Think paella's too much of a challenge? Think again, this easy recipe makes it foolproof and is full of fantastic flavour

Method

  1. Heat the oil in a deep frying pan, then soften the leek for 5 mins without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally.
  2. Tip in the peas and cook for 5 mins, then stir in the seafood to heat through for a final 1-2 mins cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.

Chorizo sausage

Chorizo sausage comes from Spain and has a smoked paprika flavour. You can use a handful of pork or chicken instead - cook for 5 mins with 1 tsp smoked paprika before adding the rice.

    Great, a favourte in our house, but I use prawns and some chicken as mixed seafood is not popular with us.

    This was easy! I used tesco chorizo sausages and raw prawns cause thats what I had in the fridge and the flavours where lovley! Will def have this again but change the fish for meat!

    Excelente! As the Spanish would say! I have made this about 4 times and it just gets better and better! I could eat it every day! To make it go further I added some chicken.

    This really is very yummy! The chorizo really supplies the flavour and so it's worth getting some decent stuff. I've made with chicken as well as the seafood and both lovely. So easy to make and will be added to my regular meals.

    Tasty, quick and easy! It was more risotto-y than paella-y but it was still a delicious dish. The chorizo goes so well with the seafood.

    Great recipe and the chorizo gives it a fantastic flavour, I've made this a few times already and everybody loves it..... just add a sliced red pepper and a couple of cloves of finely chopped garlic with the onions at the start for an extra splash of colour and more taste if you like it. I added some chopped button mushrooms with the rice and stock as well.

    A good recipe but why not paella rice and saffron instead of long grain and turmeric. Both are available in supermarkets, even here where a lot of "exoctic" things aren't. We don't eat meat but even so, without pork or chicken, it's lovely

    My favourite one-pan meal in the whole world. I add a chopped red pepper and a tin of chopped tomatoes for extra colour, and any left-overs are taken to work and heated in the microwave by my husband the next day. He says it is as good on second day as on first. Viva paella!!

    So easy to make and really tasty. Made a big batch for a group of friends who all loved it. I added chicken to it too and the whole lot was easily gobbled up!

    Just made this on our BBQ with my new paella pan...very tasty! We adapted it adding chicken,prawns, garlic and a red pepper. The kids loved it.
