Easiest ever paella

Think paella's too much of a challenge? Think again, this easy recipe makes it foolproof and is full of fantastic flavour

Method

  1. Heat the oil in a deep frying pan, then soften the leek for 5 mins without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally.
  2. Tip in the peas and cook for 5 mins, then stir in the seafood to heat through for a final 1-2 mins cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.

Chorizo sausage

Chorizo sausage comes from Spain and has a smoked paprika flavour. You can use a handful of pork or chicken instead - cook for 5 mins with 1 tsp smoked paprika before adding the rice.

    My children (8 year olds) absolutely adore this dish and it takes no time at all to prepare and cook. We add chicken with the seafood and sometimes a bit of extra chorizo but with home made stock, it doesn't need much more in the way of flavouring. Fantastic and in our top ten.

    Fantastic dish ! We don't eat pork & I've no experience with paprika, so I substituted chorizo with a spicy beef sausage that was smoked & dried. The result was superb, but I will use a little less next time. This dish also met the high standards demanded by my not-so-easy-to-please sons!

    My local Budgens didn't have frozen seafood mix (surprise, surprise!) so used a tin of 'octopus' in mild garlic sauce and fresh king prawns and a chicken breast instead. Also added mushrooms and a bit of red pepper and it was lovely. Big hit with husband and son. Daughter doesn't like fish (don't know where she gets it from!) but she wasn't home so not a problem. Might try it on her one night as the fish isn't so 'fishy' in this. Husband suffers with a bad tummy if using turmeric, so substituted saffron instead. Needed quite a lot to get that lovely yellow colour, but when you do it's so much more subtle than turmeric and Oh the smell! OK so it's a very expensive spice, but honestly how often and how much do you use it? Go on, you're worth it!

    Chorizo in the paella only in UK. Paella can be made with seafood, chicken, pork and rabbit but never with chorizo. Long grain rice is not the appropriate rice to use because doesn't absorb the flavours, look for paella rice in tesco. Spanish cooker.

    This was an easy dish to make but the rice didn't cook very well - if I make it again, I will part-cook the rice separately. Also was a little bit bland, might spice it up a bit more next time. Otherwise, looks very impressive and tastes quite nice.

    Didn't like this at all. Not much flavour and took a lot longer for the rice to cook than it said (dispite using the correct type). Will not be making this again, will check out some other recipes.
