Easiest ever paella

Method

  1. Heat the oil in a deep frying pan, then soften the leek for 5 mins without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally.
  2. Tip in the peas and cook for 5 mins, then stir in the seafood to heat through for a final 1-2 mins cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.

Chorizo sausage

Chorizo sausage comes from Spain and has a smoked paprika flavour. You can use a handful of pork or chicken instead - cook for 5 mins with 1 tsp smoked paprika before adding the rice.

    I have made this dish many times, it is a favourite in our house. When I went to make it last night I realised we were out of long grain rice so used risotto rice instead - it worked really well, in fact I intend on using risotto rice in the future (just added a little more water to the stock).

    If you want a paella, skip this recipe: this is not a paella... There are of course different types of paella, but calling this simplistic and irreverent recipe a paella recipe is plain silly. It's simply rice cooked with chorizo and some frozen veg.

    I've made this a number of times now and every time it's amazing.. As I use raw prawns I stirfry them first in garlic and chilli flakes and leave aside - to add at the same time (or instead of) the mixed seafood. It doesn't change the flavour of the dish but it does add an interesting heat. Last time I made it I found it a bit bland (could be the quality of the chorizo) so i added a teaspoon of paprica.. lovely - really lifted the dish.

    SO easy and so tasty! I made this for one couple and word spread and I made it another 5 times in the following 2 weeks for different people. I added chicken spiced in paprika and served with olives, sundried tomatos and crusty bread....and Sangria of course!

    Have cooked this recipe SO many times... it never fails,best Paella and so quick.I use 1 fish cube and half a chicken cube for the stock, if vegetarian, 2 veg cubes..(and leave out the chorizo) just plonk the big cooking pan in the middle of the table and enjoy...saves on the washing-up having one cooking pan!

  • 1 tsp turmeric
  • 300g long grain rice
  • 1l hot fish or chicken stock
  • 200g frozen peas
  • 400g frozen seafood mix , defrosted
