  • 1 tsp turmeric
  • 300g long grain rice
  • 1l hot fish or chicken stock
  • 200g frozen pea
  • 400g frozen seafood mix, defrosted


  1. Heat the oil in a deep frying pan, then soften the leek for 5 mins without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally.

  2. Tip in the peas and cook for 5 mins, then stir in the seafood to heat through for a final 1-2 mins cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.

I love this recipe, I have been looking for a good but easy paella recipe for ages and this is it! I have made it three times so far and we all love it, delicious and easy! Will definitely be making it again and again :)

It really is easy and quick. I added a bit of chicken and 1/2tsp of paprika and a few chilli flakes to give it a bit more flavour.........

What is this please...
"1l hot fish or chicken stock "...does this mean "one litre, one pint, one jug or how much exactly"...can someone clarify ??

I think it is one litre (1 L except the L is lowercase so looks a bit odd). I find one litre takes an awfully long time so I usually use around 600 millilitres.

Loved this so much - added a red pepper a half onion as well as the leek and 2 cloves of garlic at the beginning. Left out turmeric and used half tsp chilli powder, a tsp of paprika and some strand of saffron. Also only used half the amount of peas. Used a fresh seafood mix as well - fantastic!

Very easy to cook. OH thought it tasted really good. Just needed a little bit more cooking to get the rice really soft. Really, really pleased. OH said he would have it again, every night! :-))

My Rice is still hard, been cooking for 50 mins, doesnt seem enough liquid, not sure if to put more. Ive put a litre of chicken stock in. In seems sloppy but hard ?? Oh dear, i cant even do easy!

Great! Made this very easily and impressed my dinner guest. Also have enough left overs for lunch and dinner tomorrow.
I added red & yellow peppers for extra veg/colour, and used risotto rice. Stuck to a bag of giant prawns rather than the mixed seafood on this occasion. Would recommend.

I had never made Paella before, and this recipe is brilliant! Very easy, and totally delicious!! I now use this recipe all the time, and my boyfriend especially loves it!
