Sticky cashew chicken with beansprout salad

Method

  1. Mix the soy, honey and chicken and leave for 5 minutes.
  2. Heat a little oil (go easy if using chilli oil) in a wok or frying pan. Add the chicken and nuts and stir-fry for 3-4 minutes.
  3. Up the heat for a few minutes more until the honey turns sticky and coats the chicken.
  4. Mix the spinach, spring onion and bean sprouts. Drizzle with lime juice and olive oil. Season. Serve with the chicken and lime wedges.

    Really tasty - we added more soy sauce so we had a much juicier marinade. We left it to marinade for a bit longer as a result and started the temperature on low and simmered for about 10 mins. Also, add a touch of sesame oil for an extra little bit of taste - especially for the salad. Sticky rice went perfectly with it.

    This is very yummy! I make this as part of a healthy chinese night, which I regularly make (Chow Mein, Spring rolls, Sweet and Sour Chicken, Egg Fried Rice and of course this dish) It is so simple to make, really quick and very tasty! My mum always asks for seconds of this dish!! I always add an extra tbsp of honey to make it extra sticky, yum yum!

    It needs a little work... I shallow fried some 1cm long pieces of dried chilli and the cashew nuts in some cooking oil + a little bit of sesame oil and then added the chicken. Also, the salad is a bit of a non-entity, so I got some curly kale, spring onions and some small pieces of broccoli and fried them up in the wok after cooking the chicken in it. Add some extra oil and a healthy splash of soy sauce and you get a MUCH better side dish!

    quick easy and tasty had this for the first time tonight and can see it becoming a firm family favourite. Served with salad as it was hot today but can see it being really tasty with rice too.

    Great idea for a meal but with recent food safety issues with sprouted beans and shoots, please don't put them in the salad and eat them raw.

    Honey burns easily and I didn't like the method of the recipe with the cashews going in and then turning the heat up. Let's just say the whole dish semiburned.. Not a big fan!

    Quick and easy to make, tasted delicious! Keep an eye on the chicken towards the end of the cooking time to avoid it from over colouring. Served it with brown rice and stir fried swiss chard. Yum!

    I had to add more honey and soy to the chicken as it cooked as it was a bit dry, but then it was very tasty. My favourite bit was the salad, it was delicious!
