Chilli prawn noodles

This has a great bite to it and a refreshing flavour, perfect with a few nibbles with friends

Method

  1. Heat 1 tbsp oil in a wok or frying pan and cook the prawns for 1 minute. Remove.
  2. Tip in the chilli and pepper and cook for 2 minutes. Add the spring onion and sugar snap peas and cook for 1 minute, then add the sweet chilli sauce, ketchap manis, noodles and about 100ml water.
  3. Simmer for 2 minutes until the sauce is syrupy, then stir in the prawns.
  4. Snip the chives and coriander over.

    Very tasty! I forgot the spring onion which is mentioned in the recipe but not on the list, and the water at the end, but it was still lovely and tasty!

    I tried this last night, I added in an extra red chilli as recommended and it worked well. Tasty but I used dark soy and everything seemed to be swimming in dark soy. It was still tasty though. Ok I'd try it again

    I wasn't sure what ketchap manis was and didn't have any soy sauce, however I did have some thai fish sauce so I used a couple of shakes of that instead (didn't add any water). At the end I grated in a bit of creamed block coconut - absolutely gorgeous!

    Very easy to make and very tasty. Added extra chilli and also extra chilli sauce. Will be making again, great for mid-week dinner. No spring onions in ingredients list so will add next time!

    Delicious - only enough for 2 though, and that was using 400g prawns and 240g sugar snap peas (no spring onions, as not on the shopping list). Will use double the quantity of noodles next time to bulk it up.

    Can you serve this cold??? I want to add it to a buffet lunch at work. Thought I would add cooked prawns and toss them through the other ingredients before serving!! Please help someone!!! :)

    Loved the recipe. As the other half doesn't like sugar snap peas I did it with baby sweetcorn and it was delicious. I shall definitely be making this for us again. Perfect for a mid week meal as it is so quick and easy.

    This is delicious! I added more chilli as I like it spicy and worked very well, really easy to make. I had the leftovers for lunch the next day and it was even tastier! Yummmmy :)

  • oil , for frying
  • 1 red chilli , chopped
  • 1 orange or red pepper , deseeded and sliced
  • 150g sugar snap peas , sliced lengthways
  • 2 tbsp sweet chilli sauce
