Sweetcorn & prawn soup

A super-simple clear soup - a great way to use up frozen sweetcorn

Method

  1. Fry the onion in a non-stick pan with a little oil until soft, add the potato and sweetcorn and season well. Add the chicken stock and bring to a boil, cook for 10 minutes and then add the prawns and bring back to the boil. Stir in the coriander.

    I added some dried ginger and substituted chives for the coriander. Quick, easy and very tasty! Great winter dish.

    I didn't really enjoy the combination of prawns and chicken stock. I think perhaps it would have worked better if I had used vegetable stock. The sweetcorn, potatoes and onions were very nice together though.
