For the hot chocolate custard

  • 2 x 150g pots low-fat custard
  • 25g dark chocolate, chopped

Method

  1. Heat oven to 160C/fan 140C/gas 3. Brush 6 holes of a muffin tin with a drop of oil. Sieve the cocoa into a large bowl, then add the rest of the dry ingredients. Stir to combine, then make a well in the centre.

  2. Beat the milk, egg and oil together in a jug, pour into the well, then stir quickly to make a batter. Spoon into the muffin tin, then bake for 15 mins or until risen and firm to the touch. Heat the custard in the microwave according to instructions, or in a pan, then tip in the chopped chocolate and stir until smooth. Turn the puddings into bowls and pour the custard over.

The muffins ended up in the dustbin as they sank when I took the out of the oven into horrid rubbery bullets- however, the custard was DELICIOUS and so we rescued dessert by pouring the custard on some chopped up ripe banana with some toasted almond flakes to finish.

Sorry but didn't like these muffins at all. Never tasted such rubbery muffins. Sorry not suitable for my taste buds!!

I'm not 100% sure these qualify as muffins really. You can't eat them on their own, they didn't seem chocolatey or sweet enough. I did try adding choc chunks which lifted it a little but definitely required the custard. Will be searching for other muffin recipes.

I made the lemon ones and they didn't rise very well. Does anyone know why? I didn't use a muffin tin, could that make a difference?

Quick, easy and light. However you can tell they were low fat!
I added a square of dark chocolate to each one which gave them more of a chocolate taste. I would make them again and make the chocolate custard next time

These were lovely! spontaneously made them this evening because I had the ingredients and my nan had the munchies. I didnt, however, have any ingredients for custard, so instead i drizzled it with warm chocolate icing and then dusted with icing sugar. It looked and tasted like something from a restaurant kitchen and was very quick and easy!!

My family enjoyed the pudding added extra chocolate chips for extra flavour after reading previous suggestions

I made mine with quinoa flour and added a tbsp of chia seeds to the wet ingredients instead of an egg. I also made them as mini-muffins. They turned out moist and were a bit bland. They didn't rise much, but i'm not familiar enough with quinoa flour yet to know if that's the reason. I'd probably add more cocoa powder next time.

very easy recipe, yes bland, not too dry, needs the choc custard or the added choc chips or cover in the chocolate ganache from the ultimate chocolate cake like I did and was so yummy but not very low calorie or low fat...who cares when it tastes that good.

I made these yesterday, they were so easy to make. I added some roughly chopped milk cake covering chocolate to give some extra texture and although these sank to the bottom, they gave a realy nice gooey addition to the muffins. The recipe was just what I was looking for, simple and fast, thanks =]

I must admit, these are the worst muffins I have made. I added choc chips and they sank straigh to the bottom (have noted the dusting in flour tip for next time), but they still lacked flavour. They weren't dry just very bland!

Absolutely fantastic & was surprised how easy to make, as I've never made muffins before. Didn't have any custard, so just played about with some icing & melted milk chocolate - lush, no waste!

Something went wrong with mine, they did'nt rise and tasted like rubber! If you are going to eat a muffin it has to be a REAL full fat one!

Totally agree with the other comments regarding being dry on their own and also the fact that they are described as "muffins" where as a more appropriate description would be cupcakes.

I have made these since with chocolate chips and they are so much more moist. Just make sure that you coat the chips in flour to stop them sinking to the bottom of the batter.

A very easy recipe and with the modifications mentioned (both mine and other subscribers), they are a real treat.

I liked these but they were a little dry on their own. It wont stop me making them again but I will try with custard next time.
