For the hot chocolate custard

  • 2 x 150g pots low-fat custard
  • 25g dark chocolate, chopped


  1. Heat oven to 160C/fan 140C/gas 3. Brush 6 holes of a muffin tin with a drop of oil. Sieve the cocoa into a large bowl, then add the rest of the dry ingredients. Stir to combine, then make a well in the centre.

  2. Beat the milk, egg and oil together in a jug, pour into the well, then stir quickly to make a batter. Spoon into the muffin tin, then bake for 15 mins or until risen and firm to the touch. Heat the custard in the microwave according to instructions, or in a pan, then tip in the chopped chocolate and stir until smooth. Turn the puddings into bowls and pour the custard over.

We found that without the custard they weren't so great, I would advise you to add some more flavour and moisture.

I found the recipe a bit bland, so I added an additional 2 tbsp of cocoa powder and 2 tbsp of smooth peanut butter (microwaved for 30 seconds) and they turned out so lovely! :)

baked this yesterday, the cake itself is a bit bland ; however, I dotted homemade sour cherry pudding and iced with left over butter cream and result is GREAT!

one thing I wish to point out is 170°c does not equal to Gas mark 5 !!
Gas Mark 3 = 325F = 170C

I knew the gas mark was too high and baked at GM 3.5 , timed it at 10 mins. check and further baked 4 mins.

I added some mashed banana to these, and they were lovely - I feel that, had I not, they might have been a little dry. This did mean that I had to extend the cooking time a little.

I think that calling these "muffins" is a little misleading, as they really need the sauce for both taste and moisture.

I would definitely make these again!

I don't like custard, but was worried the muffins would be dry on their own, so I added chocolate chips. Perfect!

Like most people, we thought these were a bit dry. I added demerrara sugar on the top before baking and smothered them in (home made)chocolate custard so they were more edible than they might have been but a bit disappointing.

My husband made these tonight and they turned out lovely! So healthy and they really do satisfy your chocolate craving. I would recommended the custard though as it would be a little bland with out it.

After reading the comments saying they are quite dry my husband decided to add a little bit of no fat greek yoghurt to the recipe before baking, and he used a bread maker's tip... He put lots of ice cubes in a ceramic bowl at the bottom of the oven as this creates steam that keeps the muffins moist as they cook. They weren't dry at all!

I mad these tonight as a super fast dessert. My partner and I are on a diet but I have a sweet tooth and every weekend I try a new healthier cake/dessert. The muffins were so easy to make, they cooked well, unlike the other comments they didn't sink or taste dry. The custard was a good idea aswell. They are not very sweet to be honest but they satisfied me as I felt like I was eating a proper pudding. I will make again.

I added an extra egg white and whisked them up to make the sponge light and fluffy. Also added a big spoonful of chocolate spread. Very yummy and will definitely make it again :o)

These are the perfect low fat muffins. They can explode if you mix the flour in too quickly so fold it in slowly for the best results. Overall, a great recipe!
