Ingredients

  • 2 tbsp oil
  • 2 red onions
  • 1 chilli 2 garlic cloves
  • (1" fresh lemon grass)
  • 200g red lentils
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 400ml coconut milk
  • 1lime juice
  • 2spring onions
  • 1 oz fresh coriander
  • salt and pepper to taste

Method

  • STEP 1
    fry onions, garlic and lemon grass for about 5v minutes
  • STEP 2
    Add lentils (rinsed), spices and coconut milk
  • STEP 3
    Add1 half pints of water or stock bring to boil and simmer for 45 minutes
  • STEP 4
    Pour in lime juice and add spring onions
  • STEP 5
    Add fresh coriander, season and ladle out.
  • STEP 6
    Garnish with coriander and spring onions
