Butter bean soup with pancetta

Open a tin and get creative with butter beans - they're surprisingly versatile and tasty

Method

  1. Cook the onions in a knob of butter until soft, about 10 minutes. Add the thyme, butter beans and stock, and simmer for 10 minutes. Season, liquidise and serve topped with crisp pancetta and chives.

To cook dried beans, soak overnight then simmer for 1-1½ hours until tender.

    Just gave this a go... added some smokey bacon to onions (instead of pancetta) and quarter teaspoon lazy garlic. Result! Nice, winter warmer that I'll definitely do again.

    I always read other peoples comments before I start a new recipe so I used a small amount of chilli oil and 2 fat gloves of garlic which gave the soup a lovely background heat. I had no chicken stock cubes so used a very dilute solution of chicken gravy granules. I love the end result - a smooth textured soup similar to chicken soup but without the chicken. Love making soups now autumn has arrived - so healthy and hearty on a cold wet day.

    I thought it was awful, it tasted horribly...I might try to make it with dried beans to see if that is better than the tin

    Just cooked and ate this soup. Both me and my husband loved this and would definitley cook it again. I just added a touch of chilli and black pepper. I also didn't have any chives so I added a few shakes of mixed herbs. The Panchetta really added to the flavour and shouldnt be missed! yum :)
