Toulouse sausage & butter bean casserole

Open a tin of butter beans and get creative with this quick and easy recipe

Method

  1. Brown the sausages in a little oil. Slice into chunks. Brown the bacon in the same pan then add the leeks and garlic and cook till softened.
  2. Add back the sausages, the wine, stock and chilli flakes, ans the butter beans. Simmer for 10-15 minutes until the sausages are cooked through. Season and add the parsley.

    Really tasty! Made this last night after a long day at work and the gym. I accidentally bought a tin of chickpeas and one of butter beans as they were on the same shelf, but it worked a treat even so! :) Will definitely make this again, it's different from the everyday casserole dish :)

    I have made this twice now. First time I wasn't keen but it looks and sounds good do I wondered if I had done something wrong. Second time was the same, there is something missing and I can't pin point what it is. But I didn't enjoy it do won't be making again. Bland.

    Easy to make. Used toulouse sausages and followed recipe exactly but it tasted like something was missing. Was not wowed but ok for mid week meal.

    This was so good! I made half the quantity, and didn't add the bacon as I didn't have any. I also used white wine vinegar diluted in water instead of wine to keep costs down. Will definitely be making again soon!

    This is a favorite of ours, simple and delicious. I had red onion, chestnut mushrooms and sometimes change the bacon to chorizo.

    Deeeeelicious! I added a little splash of sugar and a tsp sugar to round the flavour off. I also added chunks of onion with the leek. this recipe is a keeper!

    All four of us loved this, although very salty - doesn't need extra seasoning! I used a tsp of mixed herbs, I'm sure parsley would be better but mixed were fine.

    One of my favourite ever recipes! I also boil some potatoes and carrots then add them towards the end, fry some mushrooms with the leeks, and I add a tin of chickpeas too so it makes a really hearty stew. So good for winter :)

    Wonderful, I can't wait to make again. Like lots of other people I used chorizo and only had Cumberland sausage and still tasted fab. I made mine with a side of mash leek and potato.

    Utterly gorgeous! I didn't have any leeks or bacon in (but the sausages from my butcher were amazing) so I used red onion and just omitted the bacon. I served it with Cous cous which went well. A really tasty, simple meal. This is sure to become one of our favoutites :)

    Quick average midweek meal. Had good quality pork sausages, so added two extra cloves of garlic. Didn't have bacon or butter beans so used cannellini beans and some slices of ham instead. A little salty, but would make again. Used extra crushed chilli flakes for a kick.

    This is a fantastic winter warmer dish and like many others I only had 'normal' sausages, so add so chorizo and was still delicious. Tasted lovely with potato and leek mash.

  • 1 glass of white wine
  • 6 slices of streaky bacon , chopped
  • oil
  • a pinch of chilli flakes
  • 1 large leek , sliced
  • chicken stock , fresh, cube or concentrate, made up to 200ml
  • 1 garlic clove , sliced
  • a small bunch of parsley , roughly chopped
  • 6 sausages (spicy ones, Toulouse are good)
  • 2 x 400g tins of butter beans , drained and rinsed
