Toulouse sausage & butter bean casserole

Open a tin of butter beans and get creative with this quick and easy recipe

Method

  1. Brown the sausages in a little oil. Slice into chunks. Brown the bacon in the same pan then add the leeks and garlic and cook till softened.
  2. Add back the sausages, the wine, stock and chilli flakes, ans the butter beans. Simmer for 10-15 minutes until the sausages are cooked through. Season and add the parsley.

    Very quick and easy - gorgeous smells throughout the house! I used a supermarket's best range of ordinary pork sausages so the kids would like it too. Used ordinary smoked bacon (not keen on fattiness of streaky) and missed out chilli and wine - again for the kids. Went down a treat with crusty bread for juices.

    Ahhh this is so lovely!!!!! I couldn't ask for more in a meal to be honest and my OH said it was the tastiest thing i have ever made! first time i made it i added way too much chilli flakes and it did overpower it but the second time i just added the recommended pinch and it was perfect. Love the butter beans with it! I use diced panchetta infused with mixed herbs (can buy from sainsburys) I've never used toulouse sausages even though they are readily available i just use Lincolnshire sausages which have a lovely zing and spice to them. I serve with baked baguettes and i always have to make sure there is enough for my OH to take to work the next day!

    This was gorgeous! I decided to cook it on a whim and while it was cooking I was dubious that anyone would like it, but I was proved wrong, the whole family tucked in (and had seconds). I had never heard of Toulouse sausages, but found some in Tesco's Finest range. I served it with crusty bread to mop up the juices and will definitely be making it again.

    Have made this a few times and it's lovely. Doesn't look too appetising at first because of the pale colour, but I add some fresh chopped parsley and serve with crusty bread or mash.

    This is so quick, easy and extremely tasty. It really does have to be Toulouse sausages though or it doesn't taste anywhere near as good. Yummy.

    A total winner! Have made this a few times now, and it works with pretty much any variety of good quality sausages. Once didn't have any wine in the house so used cider instead...still delicious! To cut down on the fat content I usually grill the sausages separately until totally cooked, chop them up and chuck them in at the end just before serving. It doesn't seem to adversely affect the flavour.

    Ive made this a couple of times now and I absolutely love it! I often get Toulouse sausages from a great butcher in London and they taste fab in this recipe. It smells lovely as its cooking and the sauce goes really well with crusty bread.

    This is delicious! Swap bacon for Chorizo as love Chorizo. Freezes really well. Smells gorgeous cooking and cooked. Ever since first made this cant stop making it every week as so lovely. Cant rate high enough. You have to try this at least once!

  • 1 glass of white wine
  • 6 slices of streaky bacon , chopped
  • oil
  • a pinch of chilli flakes
  • 1 large leek , sliced
  • chicken stock , fresh, cube or concentrate, made up to 200ml
  • 1 garlic clove , sliced
  • a small bunch of parsley , roughly chopped
  • 6 sausages (spicy ones, Toulouse are good)
  • 2 x 400g tins of butter beans , drained and rinsed
