Toulouse sausage & butter bean casserole

Open a tin of butter beans and get creative with this quick and easy recipe

Method

  1. Brown the sausages in a little oil. Slice into chunks. Brown the bacon in the same pan then add the leeks and garlic and cook till softened.
  2. Add back the sausages, the wine, stock and chilli flakes, ans the butter beans. Simmer for 10-15 minutes until the sausages are cooked through. Season and add the parsley.

    Love this recipe - so simple and easy to make. As good for friends dropping over on a Saturday night as it is for a midweek meal. Really hearty and great for winter.

    Great storecupboard recipe, even my fussy teenager who doesn't 'do beans' (except baked!) liked this. I made this after being away for the weekend and came home to be greeted with a cry of 'nothing to eat in the house'. One great meal later, it was 'Mum you're a miracle worker.'

    the wife doesn't like butter beans, she does in this meal, sometimes I change the bacon for chorizo, delicious meal.

    Scrumptious dish, couldnt find Toulose sausages (too near cHristmas- it was all chipolatas!) but found red onion & red wine ones which worked perfectly. Served it with, crispy new potatoes & roasted tomatoes & french bread to mop up the juices. Big hit! Will definately be making it again. Great homely dinner party dish sure to impress.

    Very tasty and so easy to make. We cant find Toulouse sausage in our local supermarket so I usually use any spicy sausages I can find. Great to prepare in advance.

    There were no Toulouse sausages in the supermarket so I bought Pork & Spiced Apricot ones instead. I also used Chorizo instead of bacon and added an onion (and some more garlic). Served it alongside a portion of mustardy mash. Was absolutely delicious, the chorizo made all the difference!

    We couldn't find Toulouse sausages, but used Waitrose Pepper and Red Chilli sausages instead, and those were fantastic. When we re-did it later with Toulouse sausages, it was obvious that the Chilli ones were better! No matter how you do it though, it's a fantastic, quick, tasty and warming stew.

    Didn't like the look of it, didn't look very promising... but it tasted fantastic! Went down very well with my Husband, he wants me to cook it again. I think I will try it will less fatty bacon next time as that bit put me off a little. Yum, Yum, filling winter warmer.

    Loved it!! Gave the recipe to a friend at work and he also loved it!! Used Pancetta instead of bacon, just cos I had it to hand...but superb!! Will make again, lots of times

    This was delicious! My boyfriend said it was the best thing he's eaten in months! I used pancetta instead of bacon because it needed using up, definately a favourite from now on.

  • 1 glass of white wine
  • 6 slices of streaky bacon , chopped
  • oil
  • a pinch of chilli flakes
  • 1 large leek , sliced
  • chicken stock , fresh, cube or concentrate, made up to 200ml
  • 1 garlic clove , sliced
  • a small bunch of parsley , roughly chopped
  • 6 sausages (spicy ones, Toulouse are good)
  • 2 x 400g tins of butter beans , drained and rinsed
