Method

  1. Cook the onion and garlic in a little olive oil until the onion is soft and translucent. Add the tomato, chilli flakes and beans, season well and simmer until the sauce is rich and thick. Stir through the basil then pile onto toast and top with Parmesan.

    I made this recipie for a brunch along with a few other dishes and it went down a treat, everyone was raving on it, and it was the easiest to make!

    Delicious! I am trying to enjoy a healthier diet this year and increase my iron intake so I substituted my favourite beans with this recipe. Easy to make for lunch and really tasty.

    I've just finished eating these - yum! Added a few extras - a dash of Worchester Sauce instead of oil for cooking the onion, a small red chilli deseeded and cooked with the onion, and a teaspoon of Tabasco after the beans and chopped tomatoes had gone in. Had a nice, but not overwhelming kick! In order to make it lower in calories, I didn't bother with the ciabatta. Instead I toasted 2 slices of wholemeal bread and fried an egg to complete the meal - filling, very easy and tasty and all for just 308 calories! Won't be bothering with shop bought baked beans again, perfect to have with scrambled eggs, baked sweet potato, etc. Oh, and made 3 servings of 200grams, so I have frozen the extra 2 portions

    I love this recipe. It's simple, fast, tasty and healthy. Sometimes I use chorizo and use the oil for softening the onions and garlic, fabulous. Definitely beats the tinned stuff.
