Cornish fish pie

Great for kids, use sustainably caught, white fish, such as Pacific cod or hoki

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Simmer the potatoes for about 20 minutes until tender, then drain and mash with half the butter and a little milk. Season.
  2. Meanwhile, bring the rest of the milk to a simmer in a frying pan, add the fish and bay leaves, cover and cook for 6-8 minutes. Remove the fish (keep the poaching milk) and flake into a dish, sprinkle the prawns and egg on top.
  3. Melt the rest of the butter in a pan, add the flour and mix, then gradually add 300ml of the poaching milk, mixing constantly until all the milk has been absorbed. Bring to the boil and simmer for a couple of minutes then take off the heat and mix in the parsley. Season. Pour over the fish and prawns. Spoon the mash over so it covers everything, then sprinkle with the cheese.
  4. Cook for 20 minutes in the oven until the top is golden.

Which fish

Use sustainably caught, white, kid-friendly fish for this, such as Pacific cod or hoki. Dry it well before cooking to remove excess moisture and the sauce will stay nice and creamy.

    I left out the boiled eggs and used mixed seafood instead of just prawns - still made this an easy mid-week meal, will definately make again and I am sure will become a favourite in our household.

    used salmon, cod and smoked haddock. I missed out the eggs and added mushrooms instead. Decided to try a topping of white bread crumbs and cheese - which made the dish light and delicous - not a crumb left. Will definently make again as very quick and easy :)

    This was a really lovely dish, my partner loved it and it was so fast to make, i will be making it again for sure. I used a bit of normal and smoked cod and normal and smoked salmon with a few prawns, it was not to much, had some great tastes going on which made it a fancy fish pie....

    I made this and everyone including fussy Miss 4 enjoyed it. Next time I'll use smoked fish chunks instead of the prawns though, as I don't like the taste of seafood. Otherwise, a lovely recipe that was easy to find all the ingredients for.

    Really lovely recipe. I made it with the eggs, haddock and prawns. Although I can see how easily you can change the types of fish/seafood used. This is already one of my favourites. I think with Spinach and smoked haddock is an excellent idea and I will try that next time. I served it with fine beans (steamed) lovely.

    I added shredded leeks to this as that is what my mum used to do when I was a kid. This reminded me of home, as I come from cornwall.

    Fantastic, worked perfectly. We added a handful of frozen peas to the sauce. Think it serves more than four though. We had enough for about six! Definitely make again.

    Tried this last night and it seeemed to be alot of washing up! I did think there was far too much milk too - unfortunately my flour went a bit lumpy so i ended up sieving it to take the lumps out!! I used smoked haddock, trout, plaice and prawns, carrots and leeks too. Although it seemed to go wrong it did taste delicious in the end and my boyfriend loved it. I think i will try the 'Old-Fashioned Fish Pie' on this website next.

    I used a mixture of cod, undyed smoked haddock along with the prawns. Also added a couple of finely chopped leeks, softened in a knob of butter and a spoonful of capers to the mix. A handful of baby spinach leaves just under the potato made it a complete meal in one dish and tasted fantastic.

    According to the measrement tables in my wife's Nigella Lawson cookery book 150g of butter equates to 10 level tablespoons. Is there really that much butter in this recipe ?

    I too thought that there was rather alot of butter in this recipe but followed the recipe and have to say it tasted delicious. Made individual pies for a dinner party which looked attractive and went down well.

    Tasted nice, but my kids of 5 and 3 not too keen (some eaten tho) and made lots of washing up. Huge amount of butter, so not for the calorie conscious.
