Tomato & prosciutto skewers
Make sure tomatoes are fresh - look for bright green stalks and these skewers will be mouthwatering

- Wrap each tomato and a small sprig of thyme in a strip of prosciutto. Thread the wrapped tomatoes, mushrooms and onion pieces alternately onto skewers. Drizzle with a little oil, then grill or barbecue for 8-10 minutes until lightly golden.

- 6 slices prosciutto or Parma ham, cut into 3 strips
- 200g small plum or cherry tomatoes
- 100g button mushrooms
- 1 red onion , cut into wedges
- 50ml olive oil , with a handful of mixed herbs stirred thorough, to serve
- small bunch thyme , broken into sprigs
- 6 wooden skewers , soaked in cold water for 20 minutes
