Tomato & prosciutto skewers

Make sure tomatoes are fresh - look for bright green stalks and these skewers will be mouthwatering

Method

  1. Wrap each tomato and a small sprig of thyme in a strip of prosciutto. Thread the wrapped tomatoes, mushrooms and onion pieces alternately onto skewers. Drizzle with a little oil, then grill or barbecue for 8-10 minutes until lightly golden.

    Easy to make and delicious to eat, especially the tomatoes wrapped in ham. I made this for myself one night while my boyfriend and his friend ordered a pizza - they regretted that as soon as they saw my plate!

Ingredients

  • 6 slices prosciutto or Parma ham, cut into 3 strips
  • 200g small plum or cherry tomatoes
  • 100g button mushrooms
  • 1 red onion , cut into wedges
  • 50ml olive oil , with a handful of mixed herbs stirred thorough, to serve
  • small bunch thyme , broken into sprigs
  • 6 wooden skewers , soaked in cold water for 20 minutes
