Tuna tataki noodles

Take two tuna steaks, add some special herbs and spices and you have a fantastic meal in less than 15 minutes

Method

  1. Rub the tuna with the black pepper and sear in a hot nonstick pan for 1 minute on each side, you just want to cook the very outside. Rest for a couple of minutes and then slice into strips. Put the noodles into 2 bowls and add half the tuna strips to each. Top with a pile of spring onion shreds. Mix the remaining ingredients together and spoon over the tuna and noodles.

    The peppered tuna steaks are delicious - I love the sauce in particular - it's always my standby for noodles and steamed veg when I want something quick and healthy.

    Omit the ground nut oil for an even healthier option. It doesnt change the taste.

  • 1 tsp black peppercorns , coarsely ground or cracked
  • 150g soba noodles or wheat noodles, cooked following the pack instructions
  • 2 spring onions , shredded
  • 1 tbsp groundnut oil
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1 garlic clove , grated
  • 1 tbsp ginger grated ginger
