Leek, chicken & white bean stew

Method

  1. Heat a little oil in a casserole and fry the onion for about 4 minutes until soft but not browned. Add the garlic, chicken and leeks and stir until the chicken is browned. Add the stock and bring to a simmer, cook for 8 minutes or until the leeks are tender and the chicken is cooked. Stir in the beans and heat then stir in the parsley and season well.

    This recipe surprised me, I tried it out of curiosity more than anything, but got a pleasant surprise, it's quite tasty. Also affordable and straight forward for students.

    Delicious - I made this for me and my dad. i subsituted the chicken for chicken style quorn and it came out just as nice.

    lovely stew, although i would prefer a different cut of meat, didnt like the texture of thigh, but thats just a personal thing. very tasty

    I agree that this is a little bland, I even added a splash of wine before the stock as I thought it might need a little extra help. If I was to do it again I would be tempted to add some cubed pancetta or chorizo to it.
