Carrot & cumin soup with fresh coriander

A subtly spiced low-fat soup to warm you up on a winter night

Method

  1. Fry the onion in a little oil until it softens. Add the cumin and chilli and cook for a minute then add the carrot, sugar and stock and bring to a simmer. Cook for 10 minutes or until the carrot is very soft, then whizz in a blender. Add some more stock or water if the soup is too thick and reheat if you need to. Stir through the coriander, season well. Add a spoonful of crème fraîche to each bowl to serve, if you like.

    This is a lovely soup. I added the fresh coriander in before blending. It has a slight spice kick which makes it really warming on a cold winter day

    This soup was nice but as much as I like cumin, I found it a bot too 'cuminy' with 1 whole teaspoon of cumin seeds. I will make it again but with half that amount. Also found it essential to add twice the amount of stock. I like a thick soup but I could have stood my spoon up in it before I doubled the stock.

    I found this quite lacking in flavour; despite adding a stick of celery and some corriander seeds as well as the fresh corriander. I will try again adding some more onions and see if that improves its depth.

    This is a yummy soup, i added another cup full of water when blended so wasn't as thick. Didn't need hardly any salt and pepper. I also used cumin powder, just a teaspoon and worked well, also added 1 garlic clove.

    Delicious! Made it as a starter for a dinner party and the results were amazing. Next time I might top it with toasted pumpkin seeds, just for the texture and visual appeal

    Cheap to make. Very filling. Delicious! This was EVEN TASTIER than my favourite Covent Garden brand. Changes: I used frozen carrots (instead of fresh) and butter (instead of olive oil).

    Lovely, there must be a lot of chilli lovers on this because its enough for me and the kids needed the creme fraiche but lovely soup, good enough for a dinner party

    SO EASY! The whole family loved this soup - even my husband who likes meat in every dish he eats. I doubled all the quantities and it was even tastier the next day! Definitely will be using this one again!!

    Made this today and it was so simple! It turned out too thick, so I think I added closer to a litre of stock, it worked really well though, and it's delicious, mmm ^ ^

    Love this! I added a potato at the beginning which I cooked with the cumin for a few minutes before adding the carrots along with about 250ml extra stock to make it go further. I also added ground coriander and ground cumin as well as the cumin seeds for extra flavour and left out the fresh coriander at the end. Perfect with a chunk of warm crusty bread. I had this as comfort food whilst suffering with a cold!
