Nothing goes better with a pot of afternoon tea than scones made to a traditional recipe

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Mix the flour, baking powder, salt and caster sugar in a bowl, then rub in the butter with your fingertips until the mixture looks like breadcrumbs. Stir in the raisins or sultanas, if using.
  2. Bit by bit, add 150ml milk until you have a firm dough. Turn out onto a floured work surface. Pat the dough into a circle about 1 1/2 cm thick and cut out the scones.
  3. Put onto a non-stick baking sheet and brush the tops with milk. Bake for 12-15 minutes. Serve with butter, or jam and cream.

    I made them with self raising flour instead of pain + baking powder, added only a pinch of salt and 125ml milk. They came out tasting amazing! Very fluffy and perfect with clotted cream & jam!

    This recipe was super easy and straightforward. I was able to cut out 9 scones from this recipe and each scone had risen perfectly. It's a fail proof recipe and I will defintley be making these again.

    Yuuuummmmmmyyyy!!!! Just devoured my first one, fresh out of the oven with puddles of butter..... trying desperately to resist the urge to scoff a second one...so simple to make too!!!

    Ooops, I'm just reading these comments whilst the scones are in the oven....just realised I used SR flour (not plain) AND baking powder. They're looking OK. Will report back when they're ready. UPDATE: Scones have risen beautifully and taste fab, so for those who ended up with flat scones, maybe this is the answer?

    just to let stgeorgesholiday know that in cornwall we always put the jam first, then the cream, so he's eating them the cornish way! and they do taste fab with raspberry jam and cornish clotted cream :-) I had to add a bit of extra flour but they worked out beautifully

    I looked at other comments and decided to sieve the floor, salt, baking powder into a mixing bowl. A teacher years ago said that to incorporate 'air' into a recipe made it lighter. I also used an egg, whipped with some milk for the binding liquid. As I'm only starting to bake again I used a small glass to cut out the scones and got 12 scones. I liked the crunchy exterior and light soft insides as shop bought scones can be stodgy and heavy. I will be making them again - and again!!

    I've been looking for a scone recipe with plain flour as I'm currently living in a country that has no self-raising flour. This recipe works really well with a few minor adjustments. I took the other reviewers' comments on board about salt and consistency and reduced the salt to a small pinch, and increased the baking powder to about 8g. 150ml of milk is about right, though I kept a splash of milk back to prevent the dough from becoming too sticky. As a result, the scones rose well, were fluffy inside and tasted great. I found the recipe makes 7 good sized scones.

    If you make these according to the recipe they won't rise properly. I mixed the plain flour with some self-raising and they came up nicely. Also added some dessicated coconut - very nice.
